haha think it will be hard to get an answer from a pro player :)

Depends on what kind of serve and for what kind of return:
- for both short push and flip, more open angle in beginning and close depending how much backspin. More backspin, more open angle.
- Open against long push, need more open angle compared to backside because the short pimples do not brush as well but like backside you can have more closed if you are able to brush fast. As well adjust according to the point above for push and flip.

Opening the paddle will work but it isn't very aggressive. The correct technique is to match the surface speed of the TT ball's back spin. This works with any rubber. For more aggressive strokes you can close the paddle a little but you need have higher tangential paddle speed. The trick is to not let the ball push off the rubber because then it will go low into the net. If you match the surface/tangential speed of the ball, there will be no downward force.

if you are using a modern sp such as Morisot you can do anything that inverted can do. Not the same max spin but more control. a la mima ito
If you are returning a short backspin serve you can do strawberries too. on fh there are soft flip variations, ranging from drop shot to fades and hooks with a slightly open racket and concentrating on direction disguise- this is often more useful than speed, with the slower ball giving chance to prep follow up attack

When returning serves with Short Pips when do you close racket ?
you close or open just as you would with inverted.
if you are used to playing with inverted and change to sp you will probably find with topspin that you are slightly too much closed, but couple of hours practice should enable you to fix this.
SP like Inverted is Normal rubber so your approach to strokes is Normal
within that you will discover that SP will allow you to play with more emphasis on control of speed and placement and taking the ball earlier
